Pathway I:
Culinary Arts
Recommended Prerequisite: None
Grades: 10-12
Two semesters
Credits: 10
This course is designed to teach students the requirements of safety and sanitation, knife handling and the many uses for the tools and equipment in the kitchen. In addition, students will be introduced to dining room service. As a result of successful completion of this course, students will gain entry level skills in the kitchen for preparation of Culinary Arts or Hospitality Courses.
This course satisfies UC/CSU “G” college preparatory requirement.
 
Pathway II:
International Cuisine (a.k.a International Foods)
Prerequisite: Intro to Culinary
Arts Grades: 11-12
Two semesters
Credits: 10
This course is designed for students to experience the world of culinary arts, and the fundamental skills needed to enter into the work world. The course covers; cooking techniques, menu writing, stocks, sauces, soups,
meat, and fish. This course is recommended for students who are interested in foods and how art can be created through food design. Students will also interact in a catering setting, learning how to deal with customers.
This course satisfies UC/CSU “G” college preparatory requirement.
 
Pathway III:
Culinary Catering
Required Prerequisite: Culinary Arts
Grades: 10-12
Two semesters
Credits: 10
This is as a preparation class for employment for students who work in the fields of Restaurant Service or Hospitality Services. Students will receive instruction in resorts, gaming facilities, restaurants, hotels, amusement parks and culinary arts. Students will meet with the instructor on a regular basis and then report to an employment site, where the instructor will visit and communicate with the employer. This course is designed to be a career preparation course for students to gain employment or remain in the related employment and earn high school credits. Also, students will be provided with training on resume writing, job search and interviewing techniques through the career preparation instruction.
